Recipe: Slow Cooker Vegan Moroccan-Style Lentils and Greens

Brown lentils take on a North African flair in this healthy and nutritious vegan meal.

1 pound brown lentils

8 cups vegetable stock

1 large onion, diced

2 carrots, peeled and diced

4 cloves garlic, peeled and minced

1 tablespoon ras el hanout spice blend (look in the spice section at H-E-B)

1/2 teaspoon ground ginger

1 pinch cinnamon

Salt, to taste

Ground black pepper, to taste

1 pound chard, kale, collards or other hearty greens, stems removed if desired, chopped

1 cup chopped mint leaves

4 lemons, quartered

Instructions: Carefully sort the lentils for pebbles or any other debris and rinse them well. Place them in the slow cooker with the vegetable broth, onion, carrot, garlic, ras el hanout, ginger, cinnamon, salt and pepper and stir to combine.

Cook the lentils, uncovered, on your slow cooker’s “low setting” for 6-8 hours or “high” setting for 2-3 hours or until
